The hours between the baby getting up and her first nap always seem busy in this house. Is it the same for you? Its the combination of early run, morning feed, play, breakfast, shower and getting dressed all within two hours before we head out the door to walk the dog and/or head off to nursery.
May has started to love breakfast and there always has to be finger food involved. Right now she is berry obsessed and so more often that not, she starts with a few berries giving me enough time to make a potent cup of coffee and get the rest of her breakfast in order. The last few days she has been loving this baby bircher muesli and I love that this can be made the night before and then served up quickly. You can alternate the flavours to keep things interesting….and make some extra for your own breakfast too.
Normal bircher muesli soaks the oats in apple juice before adding yoghurt but my baby version soaks the oats in milk. This makes a gentler taste but also means that the oats are creamy and that it isn’t too sweet. I have also omitted nuts because May is still too young but you could always add in some flaked almonds or ground hazelnuts if you fancy. We have been topping our bircher with this blueberry chia jam but you could also add a dollop of yoghurt or some stewed fruit depending on what you like best.
Ingredients (for 4 portions)
1 cup ground oats
1 cup milk
1/2 finely grated apple
2 tbsp apple puree (or other fruit puree)
Place all the ingredients into a bowl and stir well
Cover and leave to soak overnight
Serve topped with extra fruit puree or chia jam
